Foodie Friday: Frozen Mint Hot Chocolate Pops

Hello and happy Friday!  For those who were asking, we DID survive tropical storm Bill!  We got a bit of rain, but it did not seem as bad as it was predicted.  I am thankful for that!  🙂

As the weather has gotten warmer, frozen treats have been on the brain (and the tummy).  I was reminded of a funny story from a few years ago.  One of my sweet friends had a layover here and it was long enough for us to hang out a little!  Pretty much the only place to hang out in the airport without going though security is Starbucks!  Ha  So we met there!  It was winter and we both ordered hot drinks!  For some reason the barista made my friend a FROZEN hot chocolate!  We were both so confused!  Neither of us had heard of that before, and she had clearly ordered a HOT chocolate!
Well, that funny story inspired me this week to make a frozen hot chocolate popsicle!  So thank you Katie and random barista!!

Ingredients
2 1/2 cups plain yogurt
2 packets of hot chocolate mix
1 tsp vanilla extract
2-3 drops peppermint essential oil or 1/4 tsp peppermint extract
Popsicle molds
Handful of small marshmallows if desired

Directions
1. Mix all ingredients in a food processor

2. Pour into popsicle molds

3. Freeze for at least 3 hours

Foodie Friday: 2 ingredient raspberry ‘sorbet’

Hello all!  Welcome to another Friday!  Thank you for all the kind words, thoughts and prayers for Houston this past week as we dealt with all the flooding.  Keep them coming!  It was thankfully a really beautiful week and a lot of the water has gone down, but many people are mourning the loss of loved ones, there are still several people missing, homes have been damaged and repairs need to be made.

On a happy note, school is out!  Many kids had their last day yesterday, and some today!  The sun has been out strong and it has been a tad bit hotter this week!  Cue kids saying they want ice cream or another cool treat!  Don’t get me wrong, I love me some ice cream, but I also can’t have too much of it or it makes me a little sick.  So this week I wanted to create a cool summer treat that fit our non-dairy theme!

I bring you, Raspberry Sorbet!  IT is SO simple and easy! And pretty quick to make!

Ingredients
3-4 frozen bananas

1 small container of raspberries, washed and dried

Directions
1. Place bananas in a food processor (or blender) and blend till they are creamy! (This alone makes a tasty dessert)

2. Add raspberries and pulse till blended in.

3. Pour mixture into a glass or metal bowl.  Freeze for about 45-60 min.

4. Enjoy!
